Chakra White Jaggery Powder

Jaggery is a tasty unrefined sugar made from cane sugar. It is slightly less sweet than maple syrup and a bit thicker than honey. Its color ranges from golden yellow to dark brown and it has a rich flavor similar to brown sugar.

Storage advice

Store in a cool, dark and dry place. After opening, transfer contents to an airtight container.

Use

Jaggery is sold in disc form, inverted pudding bowl form, inverted coffee cup or bucket form or simply in manageable chunks. You can break off small amounts and use them in curries, lentil soups, chutneys, desserts, pastries, etc. or you can grate some of it with a (microplane) grater. You can use it in recipes that call for brown sugar or cane sugar, but conversely you can also simply replace it with caster sugar, jaggery, palm sugar or even granulated sugar. It is mainly the colour of your dish that will be different. Jaggery can be stored in an airtight container at room temperature for months, if not years.
